My fave, I discovered from someone I used to be with (he was from Trinadad but his mother was Nigerian), Fried plantains, coconut rice, and sauteed spinach. (can't remember the name of it) but I remember something called Jama Jama??? I learned to cook it. Still make it every once in a while.
